if you have never seen the game before, the first thing most people think of playing as, is with one hand

like 2handedism is something you have to realize works better for harder songs, which most people don't

i use the two handed style because it just works for me lol... say using two feet on a dance pad and i use two hands on a console controller.... ive played them all and i still have to say that two is always better ^^... but if u dont like my style then whatever style suits you more comfortably... but i say two hands because less movements between less fingers

ever since ffr first came out, ive used 3 fingers one hand, and now can do some pretty complex stuff, but recently, ive been using 2 hands, 1/2 fingers for each hand, and ive been doing alot better, improving alot of my B's and C's in stepmania into A's right away, so my recommendation is 2 hands, 4 fingers.
