Hi Charlotte, welcome to the FFR forums.
Yes, you can play with one hand. In fact, there are quite a few different style you can try and decide accordingly. Some of the better known styles are listed in this thread:

Like all styles, they come with their pros and cons. There are many skilled one-handed players on FFR. However, one-hand play can be limiting in regard to speed and complex patterns.
This style is possibly the most common starting style for new players. If you decide to play the game on a broader scale, I advise you to look further into the game and search for the style which is right for you.
You're question seems to also question its legitimacy.
You are allowed to play the game with any style you perfer, however the style you choose must follow these rules at a minimum:
1. There must be only 4 keys active.
2. You may not use two or more different keys for the same arrow.
3. In no way are you allowed to double set-up (refer to rule #1).
I do not have the answer to whether you are allowed to use two fingers on the same key, however for maximum legitimacy and to avoid question, avoid using two fingers for the same key.

to just add on what destiny said, you can play anyway you want to/feel comfortable playing. Whether that is with one hand or two, 2 fingers or 4, however you feel comfortable playing
if you are looking to play for fun and during your leisure time, one handed play is just fine. But if you start to get competitive and want to do well on some of the harder songs in the game(For Masters Only and For Gurus Only), switching to 2 hands will most likely be in your best interest.

Hi welcome to FFR forum. Heck yeah it's ok to play with one hand lol ; I play with one hand. But yeah, you can play any style you desire.
Playing style: original keys; one hand (three fingers); 1.25 speed
