I'm finding a hard time learning how to use two hands to play stepmania or ffr. I've always used one hand, but I feel that one hand may not be enough once I get better, and it will set me back when I start moving into the more difficult songs, and become nearly impossible to clear them with one hand.

Just about all of the best players play with two hands, and if you want to do really hard songs like one minute waltz, revolutionary etude, etc., you'll probably need two hands. You can try to become one of the best one handers, like korny, if you want, but most would recommend two hands.
