        Its the speed that it is dissolved. Sugar packets are coarsely grounded. So they don't dissolve as fast as say, powdery pixy sticks. Thus, it looks different.

        There are no chemical reactions. Its just a matter of solubility.

        The gas that comes out is carbon dioxide. Not anything foreign.

                                        This isn't exactly related to pixie sticks. But if you find pop too sweet, it's not gross to mix it with water. It had water in it in the first place anyways.
