    post recipes, talk shop, do whatever. post pics of what ya make too

    i recently became a line cook at a fine dining restaurant after a grueling 5 months of dish washing in a gastropub, and i haven't been happier to work in a kitchen for the most part.

    i've begun cooking at home for myself and my family and i make pretty good shit so yea here is a quiche recipe:

    cup flour
    1/4 cup olive oil
    1/4 cup cold water
    tsp salt
    2 eggs
    tbsp cream or milk
    add in anything to the egg mixture e.g. broccoli, fresh bacon bits, chopped scallions, etc.

    mix dry ingredients (flour n salt) with a fork. blend water and oil in a separate bowl and slowly add to dry ingredients. mix water/oil with dry ingredients to create a dough: add water if needed.

    beat eggs in a separate bowl whilst gradually adding cream. after eggs are thoroughly beaten, add whatever you want. i made a few suggestions which are damn good imo.

    shape the dough in a pie plate or dish of your choice and pour the egg mixture into the plate. i had to bake it for about 20 mins at 400F but i dunno about exact time; i just watch stuff while it cooks occasionally.

    i would post pics of my own but they are slightly different, i.e. done in a muffin tray. they still look scrumptious.

    top with diced roma tomatoes, dried celery, or seasonings of your choice.

    I'll just repost a recipe that can be found on my profile here:


    Cheddar Bacon Cornbread Muffins
    --------------------------------

    1 1/4 cups all-purpose flour
    1 cup corn meal
    1/4 cup granulated sugar
    4 tsp. baking powder
    1/2 tsp. salt
    1/2 cup grated sharp cheddar cheese
    4-5 bacon slices, cooked and crumbled

    1 egg, slightly beaten
    1 cup milk
    1/4 cup cooking oil

    1. Cook the bacon, but don't overdo it. Preferably on the chewier side than crunchy. Crumble the bacon into bite-size pieces.

    2. In a large bowl, add the flour, corn meal, granulated sugar, baking powder, salt, cheese, and bacon. Stir thoroughly. Make a well in the center.

    3. In a small bowl, slightly beat the egg. Then add and mix the milk and cooking oil. Pour into the well in the large bowl. Stir only enough to moisten the mixture. Batter will be lumpy.

    4. Fill muffin pan hollows (or greased muffin cups) 3/4 full. Bake in 400°F (200°C) oven for 20-25 minutes. Let it stand for 5 minutes. Remove from the pan. Makes about 12 muffins.

          Curly Kale Crisps

          bunch of kale, very dry (See Note)
          olive oil
          kosher salt (very little)
          pepper
          NOTE: BTW, the next time you order an Edible Arrangements Bouquet, all that green stuff that they put behind the fruit on sticks is Kale…completely edible. Make chips!

          Preheat your oven to 400 degrees F. Line a baking sheet with aluminum foil. Tear the leaves off the kale in large pieces and place on the lined baking sheet discarding the rib that runs up the center of the leaf. Drizzle the kale with olive oil and season with salt and pepper. Go very easy on the salt (see the comments for other cook’s experiences) as you can always add more later. Cook for 10-12 minutes in the hot oven. They leaves will get crispy, and maybe just the slightest bit brown on the tips, but will basically remain dark green.

          Remove from oven and eat.

                Dark Chocolate Almond Banana Crêpes
                Step 1: make yo batter.

                1 cup flour. 1 1/2 cup sweetened dark chocolate almond milk, 1/2 cup icing sugar, 1 tsp almond extract, 1/2 tsp nutmeg, 1/2 tsp cinnamon


                Step 2: Melt your chocolate in a double boiler. 70% dark chocolate (I use dark cocoa cuz I can't have milk)


                Step 3: Cook em' up on medium high heat, make them thin to roll them up later.


                Step 4: Once done, spread chocolate in a line (middle of crepe).


                Step 5: Bananas~


                Step 6: Line up bananas along trail of dark chocolate.


                Step 7: Roll them up like little swiss cakes/cigars.


                Step 8: Drench in blueberry maple syrup.



                Breakfast is served.


                not my best presentation, but roasted veggies and goat cheese with pizza sauce rules. also ground beef



                Dark Chocolate Nutella and Whiskey


                Curry what up


                Snow Crab Cobb Salad, Includes: Mesclun salad mix, Snow crab, Dragon's breath blue cheese, hard boiled eggs, cherry tomatoes, bacon, parmesan, and avocado dressing


                Maple BBQ Glazed salmon, everything here organic fresh from da garden

                            Nobody's gonna read this, but w/e


                            Lots of mushroom, chopped roughly
                            Slightly less bacon or any type of cured pork, also chopped roughly
                            Couple cartons of fresh cream NOT thickened
                            Two cloves garlic, crushed and finely chopped
                            Olive oil (not too much or it'll pool if you fridge and reheat leftovers)

                            Add olive oil to pot NOT saucepan and heat.
                            Add garlic to heated pot and bung everything else into the pot once garlic is slightly brown
                            reduce that shit



                            Cook whatever pasta until it's al dente. Don't forget to add cooking salt to the water



                            Add cooked pasta to the pot with the sauce
                            Further reduce until the sauce reaches a desired consistency
                            Serve with fresh basil and parmesan cheese
                            Pepper dat shit up
