I heard it's very good in contrast to other 3D Sonic games in terms of gameplay and graphics. There are supposedly slight differences between the Wii version and the PS3/Xbox version in that a few levels are missing (wtf).
From what I hear, the majority of the game is pretty fun; the daytime speed levels look really cool and well-done, whereas the werehog parts are somewhat mediocre by comparison. (I'm still wondering why they even added that hack-n-slash stuff to begin with. It seems wholly unnecessary. Hasn't Sega realized that what we want from Sonic games is just a lot of running and jumping? Like the good old days?) Anyway, I'm still dying to try it for myself.
Okay I'm going to admit I know more about Sonic than I probably should (and I read SomethingAwful which is full of video game nerds), so I've got a pretty good idea about what Sonic Unleashed is like.
It's basically the best Sonic game since Adventure 2, as long as you get the real (read: next-gen) version and not the dumbed down PS2/Wii version.
The daytime Sonic levels are fast as all hell and very fun, if pretty linear. It does seem like the focus is OMG MAKE SONIC GO FAST HOLY CRAP FASTER FASTER but it's overall still very fun. The nighttime "Werehog" levels are boring, but not really bad. Not like Sonic 2006 kill-you-until-you-get-really-lucky bad, just boring. Still very tolerable, and there are a few parts which are actually fairly entertaining. It's just the whole concept of the Werehog was a bad one to begin with, but the way it was pulled off was better than I'd dare to hope for.
The annoying bit is that you have to collect Sun and Moon tokens in order to advance to other areas, and there are several day and night levels in each area in which to find them, as well as the central hub world for the area. On the 360 version, you'll get half and half Sonic/Werehog levels, whereas it's skewed in favor of the Werehog on PS2/Wii (though the Wii doesn't have token hunting as you get tokens based on your rank when you finish a level). So in the 360, you can skip entire levels if you collect enough tokens to move on to the next area.
Final verdict: PS2/Wii is a joke, don't get it. 360 is very very good in comparison to recent Sonic games (Heroes, 2006 I'm looking at you), and it's definitely progress. Get it if you feel like playing an overall fun game with some boring gameplay that's tolerable and forgettable.
