what do they use to produce their songs? like what hardware or software? is there like a producer list of who produced for which ddr artist?

Don't think there's such a list for that...you'd have to ask each artist. There are Bemani fans and insiders who would know the specifics to the hardware and software that some Bemani musicians have divulged on social media like Twitter, but that kind of information is scattered and not really stated anywhere.

Here's a video showing what Sota Fujimori does when composing some of his songs. Techniques and tips, etc. but it's all in Japanese.
