Corn cut that close often has a rough texture because the kernels have been cut below the tip cap, or even cut into the cob itself. Corn kernels eaten off the cob using teeth typically cause you not to ingest these parts, leading to the smoother taste. This is evidenced by the small, translucent membranes left on the cob when you are finished eating.
I don't think this is right lol... My mom can't eat corn off the cob anymore because of diverticulitis, but she still likes to gnaw on the cob to get a bit of the juices from it (it's one of her favorite foods). So I always cut the corn off of my cob and give her the cob, and there is DEFINITELY not that much corn on my plate after I cut it off lolol
