I'd go so far as to suggest that anybody claiming to be "really good" at sex that hasn't actually done the job professionally is just internet bragging anyway, and is probably average at best.

I'd say the reason why is people say they are good at things based off of comparison. It's rather easy to compare your skills with others when it comes to things like soccer, chess, drawing, and such because it's easy to compare your level of skill or quality of work with that of others. For example, if someone likes to cook, and the majority of people that try their food agree that it's better than things they've eaten at a four or five star restaurant, it would be reasonable for that person to conclude that they are relatively good at cooking. On the other hand, with sex, there are less comparisons to be made. When it comes to the quality of sex, which is subjective, your partner might say you are good, but who knows, maybe every other person in the world would say that you are horrible at it if they had sex with you. Likewise, your partner might think your quality of sex is good, but your partner might have not slept with enough people to make good enough of a judgement.
