picture of a person roller skating in a costume (what really disturbs me about this is that i have seen this happen several times)
picture of a large group of the people doing the chicken dance/macarena/some other group dance
picture of shadow puppets on a movie screen (was this suggested already?)
picture of it raining while its sunny.
picture of racing wheelchair/shopping carts/hospital beds (our campus actually has a whole event centered around the last one)
picture of rollerskating/bike riding/skateboarding at church/school/store, etc.

i'll come up with some more later. hopefully ones that are not as lame and haven't already been suggested.

-Picture of you covered in toilet paper, with the words "Human asswiper" written somewhere.

Or ya know... you could just not do this. This will ultimately cause photo scavenger hunts to be common place, not worth doing, nothing special, etc.

Picture of you with some sort of live animal on your face. +_ If it's wild.
Picture of you scratching something expensive.
Picture of you with your mouth completely full of skittles (Or some other candy). +_ If there are some in your nose.
Picture of you pointing at someone in a store and smiling. +_ For a creepy smile.
Picture of you and a guy with hair past their shoulders. +_ If they're dreadlocks.
Picture of you in the work area at a fast-food place.
Picture of you walking in a drive-thru.
Picture of you stealing candy from a baby.
Picture of you on the very top of a tall tree.
Picture of you falling off of something.
The famous "You taking a picture of me taking a picture of you." +_ If you get both pictures.
A picture of you standing beside an Inuksuk. (Those little stone people. Build one if you have to.)
A picture of you and someone else in a box. +_ If it's a member of the opposite sex.
Picture of all of your fingers in different colours. (Blue,green,pink,red,ect.)
Picture of you walking through a store with very mis-mathched clothing. (Like shorts and a sweater, colours that don't match, and so on.)
Picture of you in public wearing (If you're a guy) a dress, or (If you're a girl) a suit.

It all depends on how many good ideas we have; the more good ideas that make it on the list, the more time you guys will have.

I feel the same about the offical ones not being long enough, I was thinking a full week would be good, possibly even 8-9 days if the list is super long.
