Because in the court of law not recording any interrogation could lead to a mistrial if a trial is needed. Not saying it is, but they always have to keep the camera on just to make sure that something like this doesn't happen forcing people to admit to something they should admit to through sheer force of the police. The fact that he turned the camera off in the first place could get him fired, but especially since a grievance of this magnitude occurred there was no option but to let him go. I just hope she sues him for assault and puts his ass in jail so he can see how it feels to be trapped with the people he locked up.
