Any time players get to start killing what are essentially Gods, regardless of the means they have to use to do so, the game just stops being interesting and starts being a munchkin fest.

Old Gods are different than Titans by quite a bit. Old Gods are "Gods" by the warcraft definition of immortality (not invulnerability, they just never die) and having worshipers. In fact the Lich King is the same genre of god C'thun is. (He's worshiped as a Death God by several races) The Old Gods are referred to by the Titans as parasites that corrupted Azeroth, but they ingrained themselves so tightly into the world that their removal would destroy Azeroth so the Titans locked them up underground when they reshaped Azeroth.
Titans are invulnerable to magic and physical attacks and to *most* magical weapons (I remember a case of where a legendary magic weapon hurt Sargeras once but I'm too lazy to Wowwiki it).
Also, Grandi, exactly. There's a marked difference in WoW lore between gods and Gods. Anything with worshippers is a god, and killing those is no huge deal.
You'll also notice on the "killing godish things" front, that out in Shadowmoon Valley, the Arrakoa (I think) were trying to summon up "A powerful and evil force" which looked suspiciously like C'thun or at least a C'thun-like being, and as a PC, you put the kaibosh on that pretty easily (I think it's a solo quest even)
Also, the fact that power creep makes an older fight much easier needs to be sort of glossed over in terms of looking at how "powerful" a being is supposed to be. Sure you can 5-man AQ40 -now- but it was still supposed to be a 40-man raid by the standards at the time, so a boss like C'thun should be considered in the "league" of "40-man raids" even though the curve means not-40 people can do it.
By that token, Ragnaros being a 40-man raid means that Neptulon (Who is more powerful than Ragnaros) could absolutely be an expansion-central boss. I'd still rather see them do something with the Emerald Dream though. Archdruid Staghelm totally needs to be a raid boss.
Kind of like the weapons in the battle against Kel'Thas, but on a more grandiose scale?
Also I do have to agree that the game needs long hard bosses again. A boss fight that takes 5 minutes and requires no more skill than an easy boss in a heroic makes raiding a lot more boring than trying to force your way through hard strategic fights that have multiple phases and are hard as ****
Hopefully that's the kind of content we'll be looking at when they put out t8 raids
There's a fine line though between making a fight interesting and difficult and just making it long.
Add two 0s onto everything's hitpoints, and you'll get plenty of long fights. But if the fight is made to last so long that everyone's OOM, used up all their good cooldowns, and just struggling to try and scrape up the last damage needed to drop the boss, it just becomes a DPS race again.
