For illustration and photography, only crediting the artist(s) and source(s) would be necessary unless explicitly stated that the work is not to be used unless granted permission. Original creations are definitely the safest route to go by, especially if you can take your own photos to use in an image composite.
In regards to font licensing, anything is fair game as long as there is no monetary involvement with this project (re: using a typeface that isn't licensed to you and/or legally bought to make money). There are plenty of sites that offer royalty-free typefaces for download, which can be used for anything, regardless of being commercial work or not—these are the safest options.
StepMania and this project have absolutely no monetary involvement whatsoever, so there is really nothing to worry about from a legal standpoint other than the music being used, which is more of a morality issue. Anything goes for this TBH

Pump typically doesn't have any guidelines. Try to imagine a DDR/ITG 06 style of stepping with lots of crosses(turns). Syncopation is more commonplace within official charts than any other rhythm game out there, it's disgusting.
