I don't think all of the settings are actually implemented yet. Some are in the works.
If you LOST settings...then...damn, I don't know. Clear your cache.

I think that's right. Some of the settings that are listed are not currently available. My guess is that they're there kind of for completeness and to indicate what's planned for future versions of the game. Some of those settings and play modifications will probably be available later, but not not. And yeah, if you lost the ability to change the usually available settings, I don't really know what to tell you. Clearing your cache or forcing the page to load from the net, not your cache, may help.

If you're that desperate to play with speed modifiers and such, why not try downloading a simulator like StepMania or Dance With Intensity, getting some simfiles, and playing them instead. I believe both of these games will allow you to use the kind of mods you want. For here, be patient. As Chromer noted, we're getting the game here for free, be glad for that.
