I normally play one handed as well. It was just the natural thing to do because that's how I normally use the arrow keys. I've played with using two hands a little bit, but it's a bit tricky for me. My hands tend to get in the way of each other and it's not too comfortable. Maybe I'll keep testing it out, it might be helpful at the more difficult levels, but I tend to just use one hand.

My stunt flying was one of my harder sims that was made for one hand. I could full combo it pretty easily.

A few recommendations, off the top of my head:

Just about everything Kilgamayan has ever made. Well, except for maybe his Uber Rave. Give his Waka Laka or Happy Smile Hello a try if you are having trouble with hard stuff.

Most of Reach's ten and eleven footers are pretty good for one hand.

Aperson's sims, with the exception of Gaussian Blur, are surprisingly friendly for one hand.

Most good sims by those authors can be found in the FFR simfile section.

It's definitely not hard at all one handed. The jumps are extremely easy to keep your combo on, and the 16th runs are really easy.
