Sorry to be a pain, I've been playing a while but i'm still not sure about the score system etc.

Could someone explain to be how the tournaments are scored and more importantly how I can check that i've got enough games and unique songs finished?? Thanks

When you go to your profile if you hover over "The Ice Cream Queen's profile" a dropdown will appear and you can click public levelranks to see what scores you have and such. You do have enough played to meet the requirements.

There is a tournament dashboard that will automatically record your best score for that round's song. It goes based on your raw score for the file. The dashboard is hidden for right now until signups close but once you can see it it's really easy to understand.

I know why the 1,000 games played rule is there, but don't you think that would deter alot of beginner players and people who might want to join from other communities from participating?

true, with the new rating system it should be 15 fully played songs within a variety of song difficulties and 100 minimum games or something like that.
